What’s (NEW) on Fabbrica’s Menu?

As seasons change, so do menus, especially when you source local produce like we do. For Spring 2015, we’ve added 9 fresh items to Fabbrica’s already-acclaimed lunch and dinner line-up. It’s not an easy process because when one’s added, often times another has to be ‘retired’.

“Spring is such a short season. I wanted a menu that was clean and flexible” says Chef de Cuisine Missy Hui. “It’s very important that the menu gives us the opportunity to manage specials and really feature what is freshest and available, week to week”

Her favourite dish? It’s a tie for the Beef Carpaccio with Cured Egg Yolk, Truffle, Piave, and Pickled Shallot and the Burrata with Pickled Figs, Roasted Muscat Grapes and Walnut Pesto. Two Italian classics with refined details.

Spring Forward ~ Easter Entertaining

Spring has finally sprung, the birds are chirping and the sun is shining. With Easter long weekend fast approaching, your days may start to become hectic. Get a Sweet Start to Spring at McEwan

Thanks to our shadow-seeing groundhog, this year’s Spring thaw was a long time coming.  All the more reason to celebrate it’s triumphant arrival with extra cute rain boots, pastel blouses, strawberry rhubarb pie and of course, Easter chocolate. 1. Laura Slack’s Baby Easter Chick – Laura Slack’s chocolates are truly works of art. Almost too pretty to eat (key word-almost), this adorable hand-painted egg would make a stunning centre-piece for a holiday sweets spread. Eyes too big for your stomach? 5. Vosges’ Organic Peanut Butter Bonbon Eggs– For those who love that sweet and salty combination, these eggs are a must try. The decadent chocolate shell surrounds a creamy peanut butter filling that’s then topped with a delicate hit of maldon sea salt to make the flavour pop! For us, Easter means the unbridled celebration of chocolate. Not just any chocolate, but the luxury handmade kind. The kind you can’t just buy anywhere. The kind only an artist can make.

Chocolate Artist Laura Slack discovered her calling for baking (and bringing joy in general) when she was asked to make a wedding cake for her sister. Her hobby quickly turned into a passion, and she went on to train intensively at some of the world’s most prestigious pastry arts schools. An early background in science had her inspired by the meticulous challenge of being a chocolatier.

We got a sneak peak at her holiday specials and felt our eyes getting fat. For those late-night long-weekend snacks (you know, the ones you sneak when no one’s looking), there’s the Chaucer’s Heart – possibly the most ridiculously amazing piece of chocolate you’ll ever put in your mouth.

This little piece of heaven has a soft spot in her heart, not just because it propelled her business, but because the lion symbolizes her dream of creating a regal chocolate experience above all others (plus she and her husband are both Leos).

A romantic gesture; a thank you to a client; an extra special treat on Easter morning. People will often reach out to Laura to say thank you after tasting her chocolate; it’s that good.
